Waffles

Guess who just ordered a waffle iron?!  :)  Yup, we are inspired to create our "new favorite food", thanks to Bruges in Salt Lake (as the locals call the city)

Liege waffles! Bruges offers two kinds of Liege waffles - Vanilla or cinnamon.  You can stuff them with 2 bars of Belgian chocolate AND add individual toppings.  Oh how to choose???

The very friendly waffle chef gave us quick tour of their key processes. The dough (a secret recipe with Belgian sugar chunks in it) is made early in the morning and left to proof briefly. It is then frozen to stop the proofing. When the dough is ready to be used, individual servings are allowed to sit in the proofing oven before plopping them onto the irons

It was late afternoon/early evening and not yet busy, so while waiting for food, we chatted with the owner, Pierre - trying to convince him to move to the Bay Area and to add moules to his menu :)  M found educational material and giggled his way through Asterix in Belgium and

Dalton City, a Lucky Luke adventure.  Very befitting considering we are in stage coach/pioneer/Wild Wild West land ;)

The best frites, with Samurai sauce and Lemon Pepper Dill sauce.  Forget Utah's "fry sauce"!

Vanilla waffle with creme fraiche and fresh raspberry. The waffles were delicious and just the right amount of sweetness, with bits of imported sugar slightly caramelized on the outside.  Actually, we could inhale their creme fraiche with *anything*

Cinnamon waffle with vanilla ice cream - a diabetic's death wish! Okay, okay, I'm just saying that because I'm bitter that K chose cinnamon (one of my least favorite spices in the universe).
