Pasados del Presidio

Happy Birthday, San Francisco!

If you're in the City this weekend, make sure to drop by the Presidio and experience early California rancho life.  We went three years ago, and found many wonderful activities for kids, including making adobe bricks, grinding maiz blanco, grooming Spanish horses, witnessing descendants of the Anza expedition honor their ancestors at the flagpole, meeting Father Junipero Serra (who is a wonderful story teller!), going on an archaeology walk, and so much more.  You'll also get to sample California rancho cooking - freshly cooked corn tortillas and fried plantains.... what a combo!

The Presidio we know today has its roots in events that took place more than 230 years ago. In 1776, a group of soldiers and pioneering families completed their long trip from Mexico to the bay in Alta California. Here they built El Presidio, a fortified settlement. From this modest beginning, the City of San Francisco was born.

Each year the park hosts a series of public programs commemorating “San Francisco’s birthday” and the founding of the Presidio. Pasados del Presidio events are open to all. There’s something for everyone!

Ethiopian Injera

Making injera, the Ethiopian sourdough flat bread staple, may seem daunting at first but it is a simple recipe.

The process is not unlike making a crepe... you need to limber up your wrists and practice, practice, practice

until you get that perfect paper thin skin to wrap, soak up, and of course devour delicious African cuisine.  [I'm kidding about "paper thin" :) ]  It's really not that scary!  If it is, you can also visit the wonderful folks at Cafe Colucci Market in Oakland early in the morning to see how they make their injera.  You'll be tempted to come home with a bag or two of fresh flat breads.

Brews and Fermentation

We are reading the history of wines, beers and distilled alcohol from McGee's On Food and Cooking and Sue Shepard's Potted, Canned, and Pickled. And we are learning that the science of fermentation can be a lot of fun even if fermented hops may not taste very good!

Here are a couple of places in the SF Bay Area where you can learn how carbohydrates are converted into alcohols, acids, and other by-products. The kids might feel a little out of place, but I'm sure adults (and under-aged factory geeks) will enjoy ;)  The Anheuser-Busch brewery in Fairfield, where they produce five 6-packs per second (that's a lot of beer!) and Anchor Steam, a cool microbrewery in San Francisco. I would recommend going to these tours with a bit of knowledge about how beer is brewed... you'll enjoy your visit so much more as it is a lot of information to take in.

    For my birthday present, we toured Cargill Salt's San Francisco Bay Area salt works. It was terrific! K took the afternoon off work, and we drove to Redwood City after lunch. We thought traffic might be bad, but it wasn't, so we had lots of time to waste before the tour started. We ended up spending a lazy two hours drinking coffee, eating dessert, and browsing a gazillion pamphlets which I have collected over the past few months on all things touristy in the SF Bay Area and Northern California. Wow, is there a lot to do around here. But I digress. . . this is about Salt! I love salt! We seem to crave salt a lot, although we try to consume in moderation. In fact, M just discovered a Vietnamese dessert that is both salty and sweet all at once (very interesting sensation). . . but I digress again. So, we were really geeked about the salt ponds tour, since we have been wanting to visit salt marshes and mines ever since watching the History Channel's Modern Marvels: Salt Mines segment.

    Once called Leslie Salt Company, it is now owned by Cargill Incorporated. We started the tour with an introduction to mega machines.

    Cargill's website has an education virtual tour which takes you through their process of collecting salt - The Outdoor Solar Plant. Water is collected from the bay and fed into ponds of varying concentrations.

    An evaporation pond. As the brine becomes more concentrated (called "pickle"), it is drained into another pond closer to the harvesting site (so the salt actually comes to the harvester, rather than the harvested being driven out to the ponds). This is done using. . . Gravity! Ponds are inclined so that they drain to the next pond in the sequence (there is as much as a 1% grade). A slough gate, as seen above, is used to flood the salt pond.

    Pickle is fed into these crystalizer ponds, where sun and wind will help dry up the ponds, leaving behind salt crystals. When NaCl forms, it "drops" out of the solution and builds from the bottom up. The ponds are only 1.5 feet deep. When salt has accumulated to a foot, it's harvested. This pond here will be ready for harvesting in a year's time.

    This bed was recently harvested. That is mud on top of salt beds. Salt water is brought in again to "melt" what is left. Bittern is left, and is being exported to British Columbia where it's sprayed on construction sites for dust control. The process lasts about a month before they have to spray again. That's a great use of "left-overs".

    The colors which we see are caused by microorganisms, and indicates the salinity of the ponds. Check out these amazing photographs of various Cargill salt ponds in the bay area.

    We saw different types of salt formation.

    A salt trail formed by water brought in to "melt" the salt. (Oh my gosh, don't ask me why it's not called "dissolving" the salt, but that's the term the engineer used!)

    Everyone has left but us! We were just a tad greedy and wanted to collect all kinds of samples to keep. On the way back to the bus, we took more pictures.

    We have not identified these hardy plants that live in the salt ponds, but I think the pickle weed (Batis maritima) is one of them.

    Cargill is in the process of closing down the Redwood City plant as it is no longer profitable. Land use studies are in progress, and it will be interesting to see what will be developed on these salt ponds in the future.

    Unfortunately, it doesn't seem like salt pond tours for the public are currently offered, but we have since gone on other tours to learn about salt marsh restoration. The culture and history of the salt industry in Northern California is fascinating.

    Olive Oil

    Nestled in the beautiful wind-swept hills in northern Marin County is McEvoy Ranch, a small organic olive oil producer founded by Nan McEvoy.  Take an orchard walk and mill tour to learn about the labor-intensive processes that go into growing and harvesting the olives, how the growers prevent tree diseases, wow at the Italian machinery, and sample a variety of olive oils.  Delicious!

    I know, just reading those words make some of our cholesterol levels spike. We were curious to find out how eggs are processed after they are laid. So we went to Olivera Egg Ranch in S. San Jose, and wow, we came to the right place; the plant processes one million eggs each day and it bustling with activity!

    Olivera Ranch Eggs has a small store front. Here are some of their eggs. They also sell fresh chicken on Saturdays. It has been years since I have tasted "fresh" chicken (I guess the last time was when I lived in Malaysia), so it would be interesting to purchase a fresh chicken one of these days to compare.

    We got a chuckle out these "Jumbo" quail eggs!

    At the start of the tour, we visited with Dawn, a USDA inspector. An egg processing plant has to hire a USDA inspector to oversee the production line if they want the "USDA graded" brand on their eggs. This is her "office" (a little hole in the wall, literally).

    Dawn randomly picks about 3000 eggs a day to make sure that they meet the USDA standards. She's candling an egg to show us an egg with a crack. We also learned that sometimes, when chickens get spooked, they develop blood clots, which show up in eggs. I think I have actually seen these blood clots in some eggs (a certain percentage are allowed in a batch).

    Since Dawn checks about 3000 eggs a day, she is quite deft at handling them. She holds two eggs in each hand, spinning them against the light to check for defects. Then she rolls the other egg forward and repeats.... kind of like how Chinese exercise balls are used. There is tons of information about how to grade eggs here at the USDA site.

    At the plant floor. Olivera owns one million chickens in Stockton. These blue cartons of eggs have just arrived from the farm. The plant processes one million eggs each day. A worker unloads the blue cartons from the pallets and places them into stacks next to a conveyor belt.

    As the eggs travel further down the conveyor, suction cups lift the eggs into a special soapy solution, where they are also scrubbed.

    More accidents. Not to worry, there is no waste...

    Once the eggs are washed, they are passed through mineral oil, which replaces the protective cuticle that has been washed off.

    Then, eggs are inspected by a candler for cracks and breakage.

    The candler taps defective eggs with a wand. The position of the bad egg is recorded, and later on down the line, the egg will be removed (i.e. not sent along for packaging).

    Sometimes, the handler will just pick up the defective eggs...

    and throws them into a pail.

    After candling, the good eggs are diverted into lines. You can see the eggs as they travel along this highway.

    They are dropped into different lines according to their weight. Some lines have more eggs than others - most are mid-sized eggs.

    All of this takes only minutes. A worker is refilling stacks of cartons often.

    Voila! A packaged carton of eggs, ready to be shipped to the grocery store.

    I'm not sure where the brown eggs were processed, because we didn't see any. However, here they are, all prepared to be wrapped in plastic.

    In the warehouse, are pallets of packaging material,

    Finally, the eggs are stored in a refrigerator. USDA has a 30-day "sell by" date. If eggs are not USDA-graded, they can have up to a 60-day "sell by" date.

    M has kept this egg out since last Friday. He's waiting to see how the air sac will grow as the egg deteriorates (when the egg floats, it is bad).
