Aebleskivers

 Try this at home!

Aebleskivers are tiny puffy pancakes. And they are Supercalifragilisticexpeali-Delicious! They melt in your mouth and are usually served warm and sprinkled with powdered sugar, although there are savory variations.  You don't have to travel to the Netherlands or make a road trip to Solvang, CA for these delicious morsels (although we highly recommend that road trip) .  Get one of these and some of these (you can also use a pair of knitting needles!) and you're good to go.

Mix a batch of batter (recipe below)

Butter the potholes, and pour in some batter. We filled them with blueberries preserve from Ikea Food. Then, cover with more batter.

When you see bubbles on the batter, it's probably time to flip them over. We used thick, fat skewers, which worked well. It's exactly like cooking pancakes, really.

Recipe for Aebleskivers (there are many versions, but this one sure is delicious)
2 eggs separated
2 tbsp. vegetable oil
1 1/2 tsp. sugar
1 cup flour
1/2 tsp. tsp. baking powder
1 cup milk
1/4 tsp. salt
In medium bowl beat egg yolks until light in color, stir in sugar. Stir together remaining dry ingredients; add to egg mixture. Alternately with milk. Mix in oil, in a separate bowl beat egg whites until stiff; fold into batter. Bake aebleskiver as directed. Yields about 28.
